- 5 kg beef bones (preferably with some meat attached)
- 2 carrots, roughly chopped
- 4 stalks celery, roughly chopped
- 2 large onions, unpeeled and quartered
- 1 head garlic, halved
- 2 tomatoes, quartered
- 2 tbsp vegetable oil
- 1 bottle red wine (750 ml)
- 4 liters water
- 1 bunch fresh thyme
- 2 bay leaves
- 1 tsp black peppercorns
Instructions:
- Preheat oven to 220 degrees Celsius. Place the bones, carrots, celery, onions, garlic, and tomatoes in a large roasting pan. Drizzle with oil and stir well. Roast in the preheated oven for 30 minutes, then stir and roast for another 30 minutes until everything is well browned.
- Transfer the roasted bones and vegetables to a large pot. Deglaze the roasting pan with some red wine and dissolve the accumulated flavors. Add this wine to the mixture in the pot.
- Add the remaining red wine, water, thyme, bay leaves, and peppercorns. Bring to a boil and reduce the heat. Let the mixture simmer gently for at least 6 hours, skimming off any foam occasionally.
- Strain the mixture through a fine-mesh sieve or cheesecloth. The liquid should be reduced to about 1 liter. Let it cool.
- Once the demi glace has cooled, you can pour it into ice cube trays and freeze it. Once the cubes are frozen, you can transfer them to freezer bags and store them in the freezer.
