Eclairs Recipe with Step-by-Step Instructions for Later Freezing

We have prepared an eclair recipe for you to make at home:

Ingredients:

For the Choux Pastry:

  • 250 ml water
  • 100g butter
  • 1 pinch of salt
  • 1 tsp sugar
  • 150g flour
  • 4 eggs

For the Filling:

  • 500 ml milk
  • 100g sugar
  • 2 vanilla pods
  • 4 egg yolks
  • 40g cornstarch

For the Glaze:

  • 200g dark chocolate
  • 2 tbsp butter

Instructions:

Prepare the choux pastry: Bring water, butter, salt, and sugar to a boil in a saucepan. Add the flour all at once and stir with a wooden spoon until a dough ball forms. Remove the saucepan from the heat and stir in the eggs one by one.

Fill the dough into a piping bag with a large star nozzle and pipe strips about 10 cm long onto a baking sheet lined with parchment paper. Bake in a preheated oven at 200°C (top/bottom heat) for about 25 minutes.

Prepare the filling: Bring milk, sugar, and the pulp of the vanilla pods to a boil in a saucepan. Whisk egg yolks and cornstarch in a bowl, slowly pour in the hot milk, and return everything to the saucepan. Bring to a boil while stirring constantly until the mixture thickens.

Let the cream cool. Then fill it into a piping bag with a small nozzle and fill the cooled eclairs with it.

Prepare the glaze: Melt chocolate and butter in a bain-marie and glaze the eclairs with it.

Freezing eclairs:

The eclairs can be frozen after cooling. Place them individually on a baking sheet and freeze them until solid (about 1-2 hours). Afterwards, they can be stored in freezer bags or containers. Label them with the date and contents. Frozen eclairs will keep for up to two months.

Thawing:

Let the eclairs thaw overnight in the refrigerator. For best results, let them come to room temperature before serving.
