Freezing borage - here's how to do it correctly

Borage, also known as starflower or bee bread, is an annual herbaceous plant of the Boraginaceae family. It is native to the Mediterranean region and has become naturalized in many other parts of the world. Borage is cultivated for its edible leaves and flowers, which have a cucumber-like flavor. The leaves can be used fresh or cooked, while the flowers can be used in salads or as a garnish. In addition, borage is a rich source of gamma-linolenic acid (GLA), an omega-6 fatty acid. For this reason, borage oil is sometimes used as a dietary supplement.

Can you freeze borage?

Yes, you can freeze borage. Harvest the herb in the morning after the dew has evaporated. Rinse the borage with cold water and then shake off any excess moisture. Spread the borage on a baking sheet, making sure the leaves and flowers do not touch. Place the baking sheet in the freezer and freeze the borage for 2 to 3 hours.

After freezing, transfer the borage to an airtight container or plastic bag. Label the container with the date and then return it to the freezer. When you want to use the borage, thaw it in the refrigerator for 24 hours before use.

To freeze borage flowers, first wash them carefully. Then spread the borage flowers on a baking sheet lined with parchment paper and place them in the freezer. Once the borage flowers are frozen, transfer them to a freezer-safe bag or container. Borage leaves can also be frozen in the same way.
