Freezing kohlrabi - how to do it right

What is kohlrabi?

Kohlrabi is a vegetable that belongs to the cabbage family. It is believed to have originated in Germany, and its name is composed of the German words Kohl (cabbage) and Rabi (turnip). Kohlrabi is a round, bulbous vegetable whose flesh can range from white to green to purple. Eaten raw, kohlrabi has a slightly sweet and peppery taste. It can be used in a variety of dishes, including salads, stir-fries, and soups. Kohlrabi can be eaten raw or cooked. Kohlrabi is an excellent source of fiber and vitamins C and B6. It also contains potassium and magnesium.

Can kohlrabi be frozen?

Kohlrabi can be stored in the refrigerator for up to a week. Freezing kohlrabi is easily possible, but it is important to blanch it beforehand. Blanching helps preserve the color, texture, and flavor of the kohlrabi. To blanch kohlrabi, simply boil it in boiling water for two minutes, then transfer it to a bowl of ice water. After cooling, drain the kohlrabi and place it in a freezer-safe container. To freeze kohlrabi without blanching it first, peel it and cut it into thin slices. Place the slices on a baking sheet lined with parchment paper, making sure they are spread out and not touching each other. Freeze the kohlrabi for at least two hours, or until firm. Once frozen, transfer the slices to a freezer-safe container or bag. Kohlrabi can be stored in the freezer for up to 6 months.
